Diabetic Easter Bunnies

Just to be clear these are not targeted at diabetics, the bunnies themselves look diabetic due to their size. 

These are a great option to make with younger children as they're great fun to make and quite easy. 

In summary, these are bread rolls with a little added flare due to their shape. They look like bunnies but they are still really easy to make, no complicated designs or difficult shaping. They require a skewer and a pair of scissors-that's all. 

I have used wholemeal flour as I think that they look a bit more like a traditional rabbit but you could go down the Alice in Wonderland route and make little white rabbits if you want. Another adaptation could be to add raisins or seeds such as pumpkin seeds instead of poking holes in the dough for eyes, however, I find these fall out frequently and I don't fancy one eyed rabbits so I've just poked holes in them.

As I said, these are great for kids, if you want another idea (one which I used regularly as a young child) you could add many more snips to each roll  and make them look like hedgehogs, they look very effective.

Makes 6 very large rolls

Ingredients 

400g Strong white flour

100g Strong wholemeal flour 

10g salt

7g dried yeast

40ml oil 

320ml water

Method


Place the flour in a bowl and add the salt and yeast on separate sides of the bowl, then add the oil and 240ml of the water. Then mix the ingredients together, add as much more water as you need to form a soft and slightly sticky dough.


Knead the dough for 5-10 minutes until elastic, transfer to an oiled bowl then cover and leave for 1 1/2 hours. 


Remove and knock back the dough, divide into 12 pieces and shape into balls. 


Squidge the front of each ball to make it a little oval shaped. Poke two holes for eyes on the pinched side to make it look like a face. Snip two large triangles above the eyes to form ears.


Place them on a baking tray, cover and leave to rise for another hour.


Bake for around 20 minutes until crispy and well risen.
