Saturday Scotch Eggs
Hello Readers,
It might seem a bit strange calling these 'Saturday' scotch eggs considering it's a Thursday. The truth is these are a real Saturday snack, a bit of a pastime with a new added twist. Ill be honest, I've not had a good week bakingwise-I failed my scotch eggs and my next bake (you'll see what it is soon) but I've managed to get a photo of someone elses eggs (thanks Tash). Although this wasn't in the original school Set recipe I added half a teaspoon of smoked paprika to my sausagemeat to give it a bit of a kick, leave it out if you want.
Please dont make the mistakes I did so A: Only boil 2 of the eggs (not 3) and B: take care in making sure that the sausagemeat is spread out evenly over the egg (the egg is an oval shape, not round).
Just so you know I'm still looking for a few extra Easter recipes if you have any suggestions.
Ingredients
3 eggs
100g sausage meat
50g white breadcrumbs
25g plain flour
Method
Place 2 eggs in a saucepan, cover with cold water and bring to the boil (If you have trouble boiling eggs see Delia Smith's website-I cant recommend it enough).
Boil for 5-8 minutes (this is from when the water is vigorously boiling).
Preheat the oven to 170C.
Cool the eggs in cold water and remove their shells.
Coat each egg in sausagemeat evenly.
Then roll the eggs in flour, then eggs, then breadcrumbs.
Place the eggs on a baking tray and bake for around 25 minutes.
Leave to cool.
