Mums Shiny Spring Cherry Cake

Hello Readers!

As promised, I am uploading an extra recipe this week, here it is. 

On Saturday I told my Mum I wanted to make a spring cake for Mother's Day, she instantly replied

"Make my cherry cake!!!".

I took her recipe and added a bit to it, a sticky glaze that makes the cake truly shine. 

It's an actual cake (not a sponge, a cake) which isn't sandwiched in the middle with jam, it tastes quite different to a sponge as it's quite crispy on the outside and beautifully soft on the inside. 

The cake is reasonably dense but I like this, it's different to the usual classic cakes. To get the best results you should wash and quarter the cherries so they don't sink, then you should drop them in the flour and make sure they're well covered, this produces a foolproof result. 

To show you how old (or shall we call it 'classic') recipe this is I have taken a picture of the original recipe so that you can see how retro this is!

This cake requires you to rub the butter into the flour, you can whizz it in a food processor if you want.

For the glaze sieve 75g of icing sugar and mix it with a little water to create a runny liquid, brush this onto the cake to make it shine!!!
