Choco-potle Pancakes

Tomorrow is of course pancake day (AKA Shrove Tuesday) so as usual, I gave the classic pancake a twist.To be honest I was thinking about not doing pancakes and doing waffles instead but I really wanted to use my new food mixer (a new kenwood chef) so this was the perfect chance and the pancakes are really good. I have taken a chocolate pancake recipe and added chipotle chilli paste to it. You don't have to have chipotle paste, you could use chilli powder or a finely chopped chilli if you want. The pancake batter is quite thick and makes thick pancakes-just how I like them, this also makes them easier to flip. If you don't want chilli just don't add it and have chocolate pancakes instead. Makes 10
Ingredients:
1 cup milk
1 large egg
2 tablespoons butter or margarine (melted)
1 cup plain flour
1/3 cup cocoa powder (not drinking chocolate), sieved
1/4 cup caster sugar
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
3 tablespoons icing sugar (sieved)
1 or more teaspoon chipotle chilli paste or substitute
Method:
NB: A cup means a standard sized plastic cup or measuring cup, these are widely available (I got mine in Morrisons for £1) or use a measuring jug-1 cup=250ml.
In a bowl combine milk, egg and butter. Whisk until blended.
In another bowl combine flour, cocoa powder, sugar, bicarb and salt; mix well.
Add the wet ingredients and chipotle paste to dry ingredient and whisk until dry ingredients are moistened. Batter will be slightly lumpy.
Heat a frying pan over a medium heat until hot. Oil droplets should sizzle then evaporate. Spray the pan with oil
Pour 1/4 cup of batter onto saucepan and cook for 1-2 minutes or until set around the edges. Carefully flip and cook for 1-2 minutes or until pancakes are cooked through.
