Cheesy Sandwich Slabs

Hello readers,

Just so you know, this is a basic cheese scone recipe which I have added to and changed the shape of. I have changed the shape because I think that a cheese scone with butter is quite frankly boring so I decided to make them into large squarish slabs perfect for filling and therefore turning into a tasty lunchtime sandwich.

Although I make these into slabs it is perfectly fine to make them into rounds-just cut them with a 7.5cm round cutter and reduce the cooking time slightly. 

Ingredients:

500g strong white bread flour

80g butter, diced

150g cheddar cheese, roughly grated

1tsp dried mixed herbs

2 medium eggs

1tsp salt

5tsp baking powder

250ml milk

Method:


  1. Preheat the oven to 220C/200fan/gas7.

  2. Put 450g of the flour into the bowl  and rub in the butter until it resembles fine breadcrumbs. Add everything else except th milk and mix gently.

  3. Add half the milk and gently turn the mixture to combine. Add as much milk as you need to create a soft, sticky dough.

  4. Dust a work surface with the rest of the flour and put the dough onto it. Turn the dough around and in on itself several times until the flour is incorporated and you have a smooth dough. 

  5. Push the dough gently out to a 2.5cm rectangle and cut the dough into your chosen size of slab (it depends on how big you want your sandwich) and place on a floured baking tray.

  6. Brush the tops with a little extra milk (you could add extra cheese on top if you want) and bake for around 15 minutes until golden brown.
